LiqueStar is a food grade heat stable endo-alpha-amylase enzyme [3.2. 1.1] made from the refined strain through liquid submerged fermentation. It rapidly and randomly hydrolyze 1,4 a-D-glucose bonds of the starch chains with release of mainly dextrin and small amount of glucose and maltose, so as to reduce the viscosity of the mash and liquefy the starch.
LiqueStar has excellent heat resistance and adaptability over a wide pH range. It is aplied broadly for liquefaction by producing soluble dextrin and small amount of maltose and glucose from starch in the industry of fuel ethanol, distillery, starch sweetener and beer.
