Bonito flakes, which are made from skipjack, are commonly used in Japanese cuisine. It can be added into soup to stew with other foods or sprinkled on the finished dish above. For example, when cooking some Japanese dishes like pork chop rice bowl, bonito flakes are usually used as soup base. After adding the soup to the rice, the food will taste more delicious!
Bonito flakes are made from Skipjack. After the removal of the head , tail, and fish bone, only take out the abdominal muscles behind. Steam but not boil the fish (boiling may loss the nutrition of the fish and hard to do the next process). After the fish is cooked, charbroil it with firewood slow fire for more than 10 days, While the water is evaporated to dryness, the fish will become dark appearance, hard steak like wood. Then use machine or planer to shave the fish into thin slices. After these work have been done, bonito flakes will be made successfully.
