Specification of IQF Strawberries
ITEM:IQF STRAWBERRIES
1.Processing Chart:
Raw materials-washing roughly-moving calyx off-passing through strawberries washing line-sorting –passing through metal detection matching-packing-storage
2.Color:outside color must be all red,but inside color will be subject to the different variety.The whole color should be uniform.
3.Flavor:Typically flavor and odd fresh strawberry,no off tans or off flavors.
4.Brix::7min.
5.Size:According to the strawberry standard of USDA grade A or according to the requirement of customers.
6.Defects:
1) With sun-hurt,rotten,discolored,misshapen will not be allowed to be found in final products.
2) The percentage with green or whit which surface is less than 10% of whole surface,is less than 2% by count.
3) Harmless,extraneous vegetable matter:a maximum of 1 piece,which is less than 2mmx2mm
In combined surface area,is allowable,per kilogram of fruits.
4) Free from hazardous materials---gas,metal,etc.
5) Free from grit,sand or silt,evident to the eye,or felt by mouth.
7. Microbiological:
1) Standard plate cunt:<10,000cfu/g
2) E>COLI:negative
3) Yeast and mound:<1,000cfu/g
4) There shall be no termophilic bacteria present
8.Process water:
All water used for washing ,and further processing of strawberries,will contain between 10 and 15ppm of Chlorine.
9.Chemicals:
The products must conform to all Australian/N.Z./USA regulations.
10.Packing:
Each container should be clearly and marked the information according to the requirement of customers.And only packaging approved by customers,will be used.
11.Storage
The final products should be stored under the temperature of -18degrees or below.
