Product Description

Inside the fridge, the meat ages on the bone at a constant humidity of around 85% and a temperature of 2 °C. The precise electronic control system of the can be set in precise 1°C increments. The humidity is also controlled accurately through the integrated Humidity Control system, which can be set between 60% and 85%.


About Dry aging


It is made by putting high-quality or even top-quality beef in a constant temperature, constant humidity, and ventilated storage environment of 0-4 ° C. The surface layer is air-dried and hardened. The enzymes produced by the inner layer of beef make the muscle fibers loose and dry cooked. The tasty gravy is locked in the shell again.

The dehydration caused by dry ripening can concentrate the flavour of the meat, while long-term ripening will bring the aroma of ham and acorn to the beef. Meat and cheese have to be matured after a certain period of time. Slow chemical changes make the steak taste better and the meat quality becomes softer. The fermentation process usually takes 14 to 40 days.
